Gluten-Free Banana Bread
Soft and moist, this recipe for gluten-free banana bread is my absolute favorite. I enjoy this bread for breakfast, or as a snack anytime!
Servings: 2 Loaves
Ingredients
- 2 cups gluten-free all purpose flour
- 1 tsp xanthan gum omit if flour blend contains it
- 3/4 tsp salt
- 1 tsp gluten-free baking powder
- 1/2 tsp baking soda
- 2/3 cup coconut sugar
- 8 tbsp butter unsalted, melted, and cooled
- 2 large eggs room temperature
- 1 tsp gluten-free vanilla extract
- 2/3 cup sour cream room temperature
- 1 cup bananas ripe, peeled and smashed, approximately 2 medium sized
Instructions
- Preheat oven to 350°F and grease a 9” x 5” loaf pan
- In large mixing bowl, add all dry ingredients and mix until well combined
- Add butter, eggs, vanilla extract, and sour cream to the bowl and mix together
- Add bananas and gently fold into the batter
- Pour batter into loaf pan and smooth the top of the batter with a wet spatula
- Bake in the center of the oven until golden brown and a toothpick comes out clean, when inserted into the middle of the bread (about 45 minutes)
- Cool in pan for 10 minutes before transferring to a cooling rack
